Out and About: Cooking with Zoe

Are you feeling bored and hungry? Try this simple, tasty, and cheap recipe. There are no meat products at all, so everyone can enjoy it. All you need is: 1 medium zucchini, 5 TBS tablespoons all-purpose flour, 3 TBS cornstarch, 5 TBS water, vegetable oil for frying, and 1 TBS soy sauce, 1 tsp teaspoon vinegar, I TBS water, ½ tsp sugar, a pinch of black pepper, a pinch of red chili pepper flakes for dipping sauce.  Cut the zucchini into slices and mix the flour, cornstarch, and water in a bowl. Dip and coat the zucchini slices into the batter and then cook them in a heated skillet with two TBS of oil over medium heat until golden brown. Mix the dipping sauce ingredients to dip your cooked slices while eating them. Many people love this recipe. I hope you try and enjoy this favorite among Korean recipes!

Q: What is the meaning of the Thanksgiving Holiday?

A: It’s a day that we set aside to express our appreciation for all the people in our lives and all the things that we have to be thankful for. Thanksgiving is the universal family holiday in the US, as it doesn’t have specific ties to any one particular religion or belief system.


Notes from the Office

Thanksgiving Holiday:

Thursday, November 26th is Thanksgiving. There will be no ELI classes and the ELI Main Office will be closed on Wednesday, Thursday, and Friday (Nov. 25-27). Please remember that classes will meet as normal on Monday and Tuesday (Nov. 23rdand 24th).

Returning Student Survey:

Please complete the Returning Student Survey in myELI if you have not done it yet. We understand that your plan for next semester may change, but we need to know what your plan is now so we can help you and give you accurate advice. If you want help, please contact Daryl (studyenglish@eli.ufl.edu) to ask a question or schedule a Zoom meeting.

Part-time Students:

If you are a part-time ELI student not taking a core class (Grammar, Listening/Speaking, or Reading/Writing) and plan on returning to the ELI in Spring 2021, you will have to sign up with Patricia Moon (patti@ufl.edu) by December 2 to take a test as part of your end-of-term testing.  The test will be at the following times on December 4 for students who do not have:

  • Listening/Speaking 12:45pm
  • Grammar 1:30pm
  • Reading/Writing:  2:30pm

Please also contact Patricia if you have any questions.

Student Voices:

See your writing in print! Write a poem, a story, a paragraph, or an essay. All types of submissions are welcome. The deadline to submit to The ELI Student Voices has been extended to November 24th. Email your writing to clarklhr@ufl.edu. Please remember to include your class, name, and title for the piece.

Your I-20:

Make sure your I-20 does not expire on December 16th if you will study at the ELI after this Fall semester. Contact Daryl (StudyEnglish@eli.ufl.edu) if you need to extend your I-20. Also, if you are traveling with your ELI I-20, make sure your I-20 is not expired and that Daryl signed the travel authorization on page 2. Please contact Daryl if you want to make sure your I-20 is good for travel.

Financial guarantee for scholarship students:

Most financial guarantees expire by December 11th, 2020, which means that you will need to submit a new letter by the tuition deadline of January 20th  for the Spring C semester to avoid owing a late fee or missing classes.
